Russian Olivye
One of my favorite Russian salads I grew up eating. So simple, so good.
For this recipe, I used a pre-marinated chicken which added a whole lot more flavor, although plain chicken will do just fine for this recipe.
Ingredients:
2 Large Russet Potatoes
4 Hard boiled eggs
1 Pickle
1/2 white onion
3 Tbsp Mayo
Chicken Breast
Salt/Pepper

Directions:
- Hard boil eggs, 12 minutes
 - Skin the potatoes, cut them into 1 inch pieces to cook quicker, and boil potatoes. Boil until they are easily pierced with a fork.
 - Cook Chicken on the skillet until it shreds easily.
 - Cut up into little pieces the Eggs, Pickle, Potatoes, and onion. Shred chicken into small strips and all everything into a large bowl.
 - Add Salt and pepper and 3 Tablespoons of mayo. I currently use Avocado mayo.
 - Thoroughly mix the salad and refrigerate remaining.
