Russian Olivye

One of my favorite Russian salads I grew up eating. So simple, so good.
For this recipe, I used a pre-marinated chicken which added a whole lot more flavor, although plain chicken will do just fine for this recipe.

Ingredients:
2 Large Russet Potatoes
4 Hard boiled eggs
1 Pickle
1/2 white onion
3 Tbsp Mayo
Chicken Breast
Salt/Pepper

Directions: 

  1. Hard boil eggs, 12 minutes
  2. Skin the potatoes, cut them into 1 inch pieces to cook quicker, and boil potatoes. Boil until they are easily pierced with a fork.
  3. Cook Chicken on the skillet until it shreds easily.
  4. Cut up into little pieces the Eggs, Pickle, Potatoes, and onion. Shred chicken into small strips and all everything into a large bowl.
  5. Add Salt and pepper and 3 Tablespoons of mayo. I currently use Avocado mayo.
  6. Thoroughly mix the salad and refrigerate remaining.
