Zucchini Fritters

My mothers garden has been full of zucchini this summer, so I've had an endless supply of making zucchini noodles, salads, zucchini smoothies, and now zucchini fritters!!!


1 Full Zucchini
1 egg
1/4 cup flour
1 tsp minced garlic
1/4 cup grated Parmesan
salt/pepper


Using a grater, carefully grate the zucchini into little strips. Generously salt the grated zucchini, toss with your hand to make sure to mix and saturate, and leave the grated zucchini to sit for 5-10 min. Using a clean kitchen towel or cheese cloth, squeeze out the excess liquid out of the zucchini to ensure that the mixture will fry properly.

In a deep bowl, mix together flour, Parmesan, garlic, egg, and zucchini. Add salt and pepper and mix well.

Turn the stove on to a medium heat and add olive oil to a large skillet. Once the oil is heated up, spoon the zucchini mixture onto the skillet into a circular shape, and pat down to create a patty. Allow the mixture to cook about 3-4 minutes per side until finished.

Top with sour cream and chives :)
